- Preheat oven to 400°F (200°C) and coat twelve 2½” muffin cups with non-stick spray.In a small bowl, mix together flour, baking powder, and cinnamon.In a large bowl, stir together bran cereal, peach yogurt, and ½ cup milk. Let sit for 10 minutes to rehydrate the cereal.Add raisins, carrots, brown sugar, oil, applesauce, and egg whites; mix well. Stir in the remaining ½ cup milk.Fold in the flour mixture until just moistened.Spoon the batter into the muffin cups, filling each about three-quarters full.Bake 20–22 minutes, or until a toothpick inserted in the center comes out clean. Cool muffins for 5 minutes in the pan, then transfer to a wire rack. Serve warm.
