Ingredients
  

  • 1 cup all-purpose flour
  • 1 tbsp 1 tbsp baking powder
  • tsp ground cinnamon
  • 2 cups whole-bran cereal
  • 1 container (8 oz) reduced-fat peach yogurt
  • 1 cup skim milk
  • cups raisins
  • cups shredded carrots
  • 2 tbsp packed brown sugar
  • 2 oil
  • 2 tbsp unsweetened applesauce
  • 2 egg whites

Method
 

  1. Preheat oven to 400°F (200°C) and coat twelve 2½” muffin cups with non-stick spray.
    In a small bowl, mix together flour, baking powder, and cinnamon.
    In a large bowl, stir together bran cereal, peach yogurt, and ½ cup milk. Let sit for 10 minutes to rehydrate the cereal.
    Add raisins, carrots, brown sugar, oil, applesauce, and egg whites; mix well. Stir in the remaining ½ cup milk.
    Fold in the flour mixture until just moistened.
    Spoon the batter into the muffin cups, filling each about three-quarters full.
    Bake 20–22 minutes, or until a toothpick inserted in the center comes out clean. Cool muffins for 5 minutes in the pan, then transfer to a wire rack. Serve warm.
