Ingredients
  

  • 1 cup low-fat graham crackers crushed to fine crumbs
  • 1 cup all-purpose flour
  • ¼ teaspoon baking soda
  • Pinch of salt
  • 2 tablespoons butter or stick margarine (not reduced-calorie), cut into 4 pieces
  • 1 cup nonfat buttermilk
  • 2 egg whites lightly beaten
  • ½ cup molasses
  • 1 cup golden raisins

Method
 

  1. Preheat the oven to 350°F (175°C).
    Coat four 10-ounce custard cups with no-stick spray; set aside.
    In a medium bowl, combine cracker crumbs, flour, baking soda, and salt.
    Using a pastry blender, cut in the butter or margarine until crumbly.
    In a separate bowl, mix buttermilk, egg whites, and molasses. Add to the flour mixture and stir to combine.
    Fold in the raisins.
    Spoon batter into the custard cups, filling each about ¾ full.
    Bake 40–45 minutes, or until a toothpick inserted in the center comes out clean.
    Cool in the cups for 10 minutes, then remove and cool completely on a wire rack.
