Ingredients
  

  • 60 large cherry tomatoes
  • 4 ounces cooked chicken breast, ground Chicken Filling
  • ¼ cup cup fat-free sour cream Chicken Filling
  • 2 ounces light cream cheese, softened Chicken Filling
  • 2 teaspoons grated Parmesan cheese Chicken Filling
  • teaspoon dry mustard Chicken Filling
  • teaspoon ground black pepper Chicken Filling
  • Fresh parsley or paprika for garnish Finely chopped
  • cup fat-free mayonnaise Bacon Filling
  • ¼ cup canned cooked bacon pieces Bacon Filling
  • 6 scallions, finely chopped Bacon Filling
  • cup flaked lump crabmeat, picked over Crab Filling
  • 3 ounces light cream cheese, softened Crab Filling
  • ¼ cup fat-free mayonnaise Crab Filling
  • 1 tablespoon finely chopped scallions Crab Filling
  • teaspoon Worcestershire sauce
  • 2 drops hot-pepper sauce

Method
 

  1. Instructions
    Prepare Tomatoes:
    Cut a thin slice from the top of each tomato.
    Carefully scoop out the tomato pulp; reserve if desired.
    Invert tomato shells on paper towels to drain.
    Chicken Filling:
    In a small bowl, beat together chicken, sour cream, cream cheese, Parmesan, mustard, and pepper using an electric mixer.
    Spoon a scant tablespoon of the mixture into each of 20 tomato shells.
    Garnish with parsley or paprika.
    Bacon or Crab Filling (Optional):
    For bacon: Mix mayonnaise, bacon pieces, and scallions; spoon into tomato shells.
    For crab: Mix crabmeat, cream cheese, mayonnaise, scallions, Worcestershire, and hot-pepper sauce; spoon into tomato shells.
