- InstructionsPrepare Tomatoes:Cut a thin slice from the top of each tomato.Carefully scoop out the tomato pulp; reserve if desired.Invert tomato shells on paper towels to drain.Chicken Filling:In a small bowl, beat together chicken, sour cream, cream cheese, Parmesan, mustard, and pepper using an electric mixer.Spoon a scant tablespoon of the mixture into each of 20 tomato shells.Garnish with parsley or paprika.Bacon or Crab Filling (Optional):For bacon: Mix mayonnaise, bacon pieces, and scallions; spoon into tomato shells.For crab: Mix crabmeat, cream cheese, mayonnaise, scallions, Worcestershire, and hot-pepper sauce; spoon into tomato shells.
