Ingredients

  • 21 coarsely chopped medium leek
  • 1 chopped small onion , , , 1/2 2 cups defatted reduced-sodium chicken broth
  • 1 chopped stalk celery ,chopped
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 2 cups defatted reduced-sodium chicken broth

  • 1 Large saucepan or soup pot for sautéing and simmering the vegetables.
  • 1 Cutting board and sharp knife to chop peppers, onions, and garlic.
  • 1 Wooden spoon or spatula for stirring while cooking.
  • 1 Blender or hand blender (immersion blender) to puree the soup for that creamy, smooth texture.
  • 1 Measuring cups and spoons – to ensure balanced flavors.
  • 1 Strainer (optional) if you want an extra silky soup.
  • 1 Serving bowls to present your soup beautifully.

Method
 

  1. Coat a medium saucepan with no-stick spray. Add the mar-
    garine and melt over medium heat. Add the peppers, leeks, onions,
    celery, salt and pepper. Cook, stirring, for 10 minutes, or until the
    vegetables are crisp-tender.
    Add the broth. Bring to a boil. Reduce the heat to low. Cover
    and simmer for 20 minutes. Remove from the heat and let stand for
    5 minutes to cool slightly.
    Transfer to a blender or food processor. Blend until smooth. Re-
    turn the mixture to the saucepan and heat through.
    Makes 4 servings.
